The Autumn’s First Porcinis

That’s boletus edulis; here in Slovenia they’re called jurčki, playfully pronounced your CHkee. These were a gift from my aunt last weekend, the first she found this year in Slovenia’s south-central Brkini hills, and wound up in the finest omelette I’ve made in a very long time. The recipe:

  • Three eggs, scrambled
  • Two jurčki, cleaned and chopped

Fry up in a pan and enjoy.

Write that down, you’ll be tested on Monday. Until then, enjoy your weekend.

    Oh, how great! Best food ever to be found in the woods. I remember to collect them as a kid, back home in Styria (which was originally including Slovenia, too, so we basically arre from the same country 🙂 ).We call them Steinpilze.
